About the Recipe
Banana Bread Muffins with a variety of toppings are my absolute favorite. As always, I try to keep my recipes quick, easy, and slightly more nutritious than other recipes when possible. These are an easy irresistible grab-and-go breakfast or snack.
Ingredients
1.5 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 mashed bananas
1/2 cup white sugar + 1/4 cup brown sugar
1 egg
1/3 cup melted butter
a few shakes of cinnamon
Preparation
Preheat oven to 350 degrees
Grease muffin tin (12 muffins)
Sift together flour, baking powder, baking soda, and salt
Separately, mix together bananas, sugars, egg, and melted butter
Fold in flour mixture until combined
Pour half into muffin tins, top with chocolate chips or blueberries or whatever topping you'd like, then pour the second half of batter and top with same toppings
Bake 25 minutes or until cooked fully through (if you want, for the last few minutes in the oven you can top with some brown sugar crumbles)
